Hand harvested from 2 small blocks on our Uley vineyard on March 17.
After crushing and gentle pressing, initial juice analysis showed a Baumé of 12.3 degrees, pH 3.09 and titratable acid of 9.1 g/litre. The juice was settled to near clarity before being fermented in tank to dryness at low temperatures to enhance fresh fruit characters. Following stabilisation, the wine was filtered and bottled on 27 July 2021. Alcohol 13.0%.
The wine displays citrus, pear and tropical fruit, elderflower, herbaceous and grassy aromas followed by a palate of persisting fruit flavours, minerality and tingling, citrusy acidity.
