Low bunch numbers and a poor set due to adverse weather conditions during flowering resulted in a small but high quality crop at harvest on March 18. Grapes sourced exclusively from our Uley vineyard at the northern end of the Piccadilly Valley.
After crushing and gentle pressing, initial juice analysis showed a Baumé of 13.0 degrees, pH 3.12 and titratable acid of 8.1 g/litre. The juice was settled to near clarity before being fermented to dryness at low temperatures to enhance fresh fruit characters. Following stabilisation in tank, the wine was filtered and bottled on 29 June 2020. Alcohol 13.5%.
The wine displays citrus, tropical fruit, elderflower and herbaceous aromas followed by a palate with persistent fruit flavours, minerality and tingling citrusy acidity.
