Grapes were hand harvested from a single vineyard at the northern end of the Piccadilly Valley. After crushing, gentle pressing, settling and racking, clear juice was fermented to dryness at controlled cool temperatures to enhance varietal fruit characters. Subsequent stabilisation and filtration allowed bottling on July 16.
Despite dodging some unfavourable weather events close to harvest, the grapes were hand picked disease-free and at optimal ripeness on March 26 at a Baumé of 11.7 degrees. After cooling, crushing, gentle pressing, settling and racking, the clear juice was fermented to dryness at controlled cool temperatures to enhance full varietal character. The resulting wine was then stabilised and filtered before bottling on July 16.
